Serves 4 | Prep: 15 mins | Roast: 35-45 mins

This week, we are leaning into the sweetness of Yams and Sweet Peppers, balanced by the savory pop of roasted Savvories Tomatoes. It’s a "set it and forget it" meal that uses your haul to its full potential!


The 'Fresh 4U' Haul Ingredients:

• 1.5 lbs Mini Potatoes (halved)

• 2 medium Yams (peeled and cubed)

• 1 cup Sweet Peppers (halved or sliced thick)

• 1 cup Savvories Tomatoes (kept whole for "burst" flavor)

• Green Beans (trimmed)

• 3-4 cloves Garlic (smashed)

• 1 Orange (half sliced into rounds for roasting, half for juicing over the finish)

The Pantry Staples:

• 3 tbsp Olive Oil

• Salt, Pepper, and a pinch of dried herbs (Rosemary or Thyme)

• Fresh 4U Homemade Hot Sauce (for the final kick! 🔥)


📝 EASY INSTRUCTIONS:

1. High Heat: Preheat your oven to 425°F.

2. The Base Roast: On a large sheet pan, toss the Mini Potatoes, Yams, and Garlic with 2 tbsp of olive oil and your seasonings. Spread them out so they aren't crowded.

3. Start Cooking: Roast for 20 minutes.

4. The Sweet & Savory Add-In: Pull the pan out. Add the Sweet Peppers, Savvories Tomatoes, Green Beans, and the Orange slices. Drizzle with the remaining 1 tbsp of oil and give it a quick toss.

5. The Final Crisp: Roast for another 15-20 minutes until the potatoes are golden, the yams are tender, and the tomatoes have just started to burst.

This recipe highlights the Gold Delicious Apples, Bosc Pears, and crisp Rustico Peppers featured in this week’s lineup.


🛒 Ingredients From Your Box:

• The Base: Fresh Lettuce (chopped) and crisp Celery (thinly sliced).

• The Sweet: 1 Gold Delicious Apple & 1 Bosc Pear (sliced into matchsticks).

• The Crunch: Rustico Peppers & Mini Cucumbers (diced).

• The Pop: A handful of fresh Strawberries or Golden Berries.

• The Zest: Juice from half an Orange and a squeeze of Lemon/Lime.
